Toad in the Hole is simply a Yorkshire pudding batter cooked with
pork sausages.

Ingredients
450 g pork sausages (get good quality ones)
25g lard or dripping ( I tend to use vegetable oil )
225 ml milk
100g plain flour
pinch of salt
1 egg
Method
1 Prick the sausages all over with a fork. Put lard in a small roasting
and add the sausages.
2 Bake in the oven at 220c for 10 minutes until lard is hot.
3 Meanwhile, make the batter. Mix the milk and 50ml water together
in a jug. Put the flour and salt in a bowl. Make a hollow in the
centre and break the egg into it.
4 Mix the flour and egg together gradually, then add the milk
and water, a little at a time, and beat until the mixture is smooth.
5 Pour the batter into the tin. Bake for about 30 minutes,
or until golden brown and well risen. Do not open the oven door
during baking or the batter might sink.
